Dorado or Mahi-Mahi in Hawaiian (Coryphaena hippurus) is not only a wonderful sport fish but it makes great eating, too!

In other languages it is known as lampuga, lampuka, rakingo, calitos, or maverikos. These colorful gamefish are surface-dwelling ray-finned fish found in off-shore waters.

They are one of only two members of the Coryphaenidae family, the other being the pompano dolphin-fish.

(Mahi-mahi means very strong in Hawaiian.)

Peak season – May through October.

This deep water fish can grow to a large size. In September 2010, a Costa Rican newspaper reported a 2.3 m (7.5 ft) grouper weighing 250 kg (550 lb) which was lured using one kilogram (2.2 lb) of bait.
